For the Curd Herd: An All-New Cheese Club!

Yes, you read that right. Via Umbria is thrilled to report that we’re starting our own Cheese of the Month Club! Here’s the deal: every month, members will be able to pick up half a pound of one of our beautiful cheeses, selected by me, your friendly neighborhood cheesemonger! The cheeses will vary based on season and what is tasting particularly delicious at the moment. We’ll kick off every new month with a tasting event–an evening at the store when you can pick up your new cheese, taste it, learn about how to pair it with beverages and condiments, and ask any questions you may have. It’s a great way to expand your cheesy horizons and try something new and exciting!
The First Cut

Since we’re an Italian store, we decided to kick off this exciting new venture with Parmigiano-Reggiano, the “King of Cheeses.” A classic for a reason, this delicious giant is renowned the world over for its nutty, sour, fruity character. Not to be confused with generic, dusty “Parmesan”, real Parmigiano-Reggiano is, by Italian law, only produced in a handful of provinces in Italy: Parma, Reggio Emilia, Modena, and Mantua.

Made with partially skimmed raw cow’s milk, the Parmigiano-Reggiano curds are initially packed into 100lb wheels and loaded into stainless steel molds so that they can take on their wheel shape. (Fun fact: the whey that’s siphoned off from the curds during this step is traditionally fed to pigs used for Prosciutto di Parma.) After a few days, the molds are removed and the name “PARMIGIANO-REGGIANO” along with the the plant’s number and the date are printed onto the outside of the cheese. This is an easy way to spot a real wheel of Parmigiano-Reggiano–only the real thing will have its name emblazoned on the outside of the wheel. After spending a few weeks in a brine bath to absorb salt, the cheese is then allowed to age for a minimum of 12 months, and a maximum of 36. After being checked for quality and passing inspection, these cheeses make their way to cheese fans around the world.

People have been enjoying Parmigiano-Reggiano since at least the 13th century, and with good reason–it is one of the most versatile cheeses on the planet. It can be grated over pastas, shaved over salads, stirred into soups or risottos, or just cut into chunks and eaten as is. While most people think of this as a rock hard cheese, when it’s first opened and unoxidized, the interior of the wheel, or “heart”, is very soft and full of moisture. It’s only after being exposed to air that the cheese dehydrates and becomes drier and less flavorful. It’s for this reason that we always recommend buying a large chunk of Parmigiano-Reggiano as opposed to pre-grated or sliced–the less surface area that’s exposed to air, the more moisture your cheese will retain and the less flavor you will lose.

You’ll have a chance to taste the heart of the Parmigiano-Reggiano when we open our newest wheel at our kick-off Cheese of the Month Club event on Wednesday, June 1st. Love is in the air!

Each year, during the col-drums of February, the harsh winter seems to melt away as people celebrate Valentine’s Day, the holiday synonymous with romance. Although there are several theories on the origin of the holiday, it has been adopted in many countries across the world as a way to celebrate love among couples, friends, and family.

Italians are typically considered to be lovers, but the celebration of Valentine’s Day in Italy is actually an American import. Known as “La Festa degli Innamorati” it is typically only celebrated between lovers and sweethearts.

This Valentine’s Day Via Umbria is combining the American and Italian traditions with our Sweetheart Suppers being held on two nights – Saturday, February 13 and Sunday, February 14. If you don’t look forward to the annual Valentine’s Day chaotic restaurant experience, or if the thought of cooking a meal for two has you hiding in bed with the blankets over your head, take the stress out of romance and enjoy dinner at a cozy table for two in Via Umbria’s laboratorio demonstration kitchen where every table is a chef’s table. But it’s not all cupid and hearts around here; if you’re looking for a unique spot for ladies’ night out or a group date with friends to celebrate the occasion, book a seat at the communal table to enjoy a relaxed atmosphere, conversation, and wonderful Italian food.

Each evening features four courses of delicious Umbrian dishes, including appetizers, wine pairings, and a decadent chocolate dessert. And don’t forget, dinners in our laboratorio are more than just great food: our open kitchen format allows you to watch your meal as it’s created, and you can interact with the Chef. We promise it will be an unforgettable evening!

Solution: Italians know that nothing makes a day special quite like surrounding yourself with the finest things life has to offer, and for us, that means making every meal a celebration.

Every day in the cafe from 5-7 PM, enjoy a new take on the traditional ‘bar snacks’ with our rotating menu of small plates for one or to share, and pair it with our favorite Italian cocktails or a glass of wine.

Meet new people as you snack on the bites found in bars and cafes across Italy. It’s an Italian piazza here in Georgetown.

When it comes to Italian cooking simplicity is the watchword with flavors based on a few perfect ingredients. Come join Chef Vickie Reh as she illustrates this important and delicious concept–making wonderful dishes with five ingredients or less.
 
Along with simplicity, Chef Reh will discuss the importance of sourcing perfect authentic ingredients (we can certainly help you with that) whether those ingredients are local produce, farmstead cheeses, artisanal pasta or an amazing bottle of New Olive Oil just arrived from our friends in Umbria.

May 28th 7:00 PM – Umbrian Food and Wine Tasting

We would like to invite you to a special wine tasting on Thursday May 28th at the home of Sue Cimbricz. The evening will feature the wines of Giampaolo Tabarrini, as presented by Bill Menard from Via Umbria, as well as our featured guest chef, Simone Priori Pesci. Back in Bevagna, Simone runs an exceptional restaurant, Le Delizie del Borgo, featuring regional specialties and seasonal delicacies. Needless to say we are thrilled to have him back in DC, extending his knowledge of food and the power of sharing it with our community here. Prepare yourself for a night of exceptional wine and delicious Umbrian bites.

Our beloved Chef and restaurant owner Simone Proietti-Pesci is returning to DC this month! This master of Umbrian specialties is available to cook a private dinner in your home for you and up to ten guests. May 30th 5:00 PM – PBS Dream of Italy series premiere
Via Umbria is rolling out the red carpet in our Galleria to celebrate the premiere of the six-episode travel series Dream of Italy on PBS.  Join host Kathy McCabe and Via Umbria owners Suzy and Bill Menard at the store on Saturday, May 30th at 5 p.m. for a celebration of all things Italian and Umbrian.

Dream of Italy, the PBS series, is based on the award-winning subscription travel newsletter, Dream of Italy. In the series, McCabe visits six areas of Italy, meeting the colorful locals — chefs, artisans, historians — who are deeply connected to their land, carrying on and preserving the traditions of their ancestors. The regions covered in the series include Rome, Tuscany, Puglia, Piedmont/Lake Iseo, Naples/The Amalfi Coast and of course, Umbria.The crew of Dream of Italy stayed in La Fattoria del Gelso, while filming in the region.
Our special guest is Chef Simone Proietti-Pesci, owner and master chef at La Delizie del Borgo in Bevagna. Chef Simone will conduct a cooking demonstration of traditional Umbrian delicacies and of course there will be plenty to taste. Plus, sip on some of Umbria’s best wines and watch clips from the series.

RESCHEDULED – June 9th, 7:00 PM – Book Club, Eating Rome by Elizabeth Minchilli

Elizabeth Minchilli has been eating her way through Rome since she was 12 years old. Eating Rome, based on her popular blog Elizabeth Minchilli in Rome, is her homage to the city that feeds her, literally and figuratively. Her story is a personal, quirky and deliciously entertaining look at some of the city’s monuments to food culture. Join her as she takes you on a stroll through her favorite open air markets; stop by the best gelato shops; order plates full of carbonara and finish the day with a brilliant red Negroni. Beautifully illustrated with Minchilli’s full-color photos and enriched with her favorite recipes for Roman classics like vignarola, carciofi alla romana and carbonara.

Join Via Umbria and Daniele Sassi, sales manager for Tabarrini Montefalco for a special Umbrian dinner and wine pairing at Casa Luca.  Dinner will consist of a special 4 course Umbrian dinner paired with the wines from the Tabarrini vineyard.

Montefalco bianco “Adarmando”

Umbria Rose “Boca di Rosa”

Montefalco Rosso

Sagrantino Colle Grimaldesco
