Between the rugged overhead wooden beams and the long elegant glass table, you may feel caught between the modern and traditional in the Enoteca. It’s the perfect starting point for our “Choose Your Own Bottle” or CYOB dinners, where guests can relax in the comfort of family-style Friday night dinners while trying something new. What better way to do that then with a bottle of wine?

Wine Tasting with Our Experts

As the Wine Program Intern, my job is to help select a wine that not only pairs well with the menu, but also with your own tastes. My advice would be to arrive early so that before the dinner starts I can treat you to a private wine tasting in our Wine Room. Although our Enoteca boasts more than 100 different bottles of wine, I’ll narrow it down to a few for the occasion.

Often when you go to a restaurant there is a separation between the wine list and the guest. There’s a sort of needle in a haystack mania that takes over as you scour the selections and try to find something just right. I think part of why I love CYOB so much is because I can help connect every guest to the wineries. Sharing stories of harvests and visits is just a part of how I am able to take part in a more personalized selection. Though, the best part would have to be the look on their faces when they first taste the wine with their meal in the Laboratorio. Led by the chef, Johanna, the entire evening is focused around Via Umbria’s mission to Discover, Savor, [and] Share.

Food and Wine Tour

For those of you fully indoctrinated into the Via Umbria lifestyle, you are well aware of our friendship with Chef and Restauranteur Simone Proietti-Pesci. At his newly re-opened restaurant in Bevagna, he serves up dishes all by himself in his tiny kitchen. Everything he creates is an extension of himself and his region; he crafts meals with care, love, and intent, with a dash of character on top to finish.

On the Food and Wine Tour, our new stateside chef, Vickie Reh, worked side by side with Simone in his kitchen, preparing a meal for everyone on the tour. A few bottle of fabulous local wine were procured, corks popped, and gentle conversation began before the first plate arrived. And then another. And then another. And then another.

With the ingredients bought and collected that day, these two chefs created an Umbrian meal to remember. And one that we will hopefully be able to recreate stateside when we open.

Our guests were able to discover the thrill of a single – channel kitchen, savor the dishes served with much love, and share the effervescence and friendship that comes naturally to Simone. While the food Simone produces is always stellar, the mood his restaurant and manner put you in are ever more important. You are not just a guest, you are a new friend.

Being at Simone’s, it is easy to feel at home…that is if your home had a private Italian chef (and you can hire him here in the USA, in January!). A relaxed atmosphere, perfect wine, and haute cuisine that makes you feel comfortable made for a night to remember.

Announcing: A Pardi Wine Dinner

Cantina Pardi Wine

We are pleased to present, in tandem with Casa Luca, a wine dinner featuring our dear friend Albertino Pardi’s wine.

The Pardi story begins just outside the city walls of Montefalco, Umbria, in the heart of Sagrantino country. In 1919, the brothers Alfredo (1880-1953), Francesco (1882-1965) and Alberto Pardi (1889- 1943) established the Cantina Fratelli Pardi.

From 1919 to 1945, the brothers worked the grapes of their family vineyards by hand on the ground floor of the abbey of San Francesco in Montefalco. The Bianco, Rosso and Sagrantino Passito wines produced in this historic winery were marketed all over Italy, and the most prestigious buyer was the Vatican.

The wine expertise of the Pardi brothers was passed down to the next generation, keeping the tradition of cultivation by hand. Since 2002 great-grandsons Francesco, Gianluca Rio and Albertino Pardi have been carrying on the traditions of their great-grandfathers’ winery.

On Sunday, August 23rd, at 5:30PM, we are pleased to welcome their great-grandson Albertino Pardi, who will lead us as we taste great wines from Cantina Fratelli Pardi, and pair them with the exquisite cuisine from their native region of Umbria, prepared by the executive chef at Casa Luca with consultation from an Umbrian chef.
